These air fryer potatoes are ready in 30 minutes and give you 15 g of protein per serving: crispy outside, with MEALUP Black Truffle and fresh parsley sprinkled on straight from the basket. A snack or side that takes one round of chopping and one stir.

The air fryer uses less fat and gets close to the crunch of fries, with no pan and no smell of frying oil in the house. The cubes come out golden outside and soft inside.

MEALUP Black Truffle goes on right after cooking, while the potatoes are still hot. Truffle flavor shows best on a warm, crispy crust, so it never goes in before cooking.

Ingredients

Serves 3

Preparation

  1. Cut the potatoesScrub the potatoes and cut them, skin on, into chunky cubes of about 2 cm.
  2. Season themPut the cubes in a bowl and add the oil, salt and black pepper. Toss well until every cube is coated.
  3. Fill the basketSpread the potatoes in a single layer in the air fryer basket, without piling them up.
  4. Air-fryCook at 200°C for 18 to 20 minutes, tossing the potatoes in the basket halfway, until golden and crispy.
  5. Sprinkle and serveTip the hot potatoes into a bowl. Sprinkle them right away with 1½ servings (45 g) of MEALUP Black Truffle, ½ serving (15 g) per person, and the chopped parsley. Toss gently and serve.

Tips

  • For even cooking, don't overfill the basket. Work in two batches if you need to.
  • No parsley? Fresh dill goes nicely with the truffle flavor too.
  • Leftover potatoes reheat in the air fryer in 3 minutes and stay crispy.
  • Serve them on their own as a snack or next to roast meat.
  • Want more protein? Use a full serving (30 g) per person, and each plate comes to about 24 g of protein.

MEALUP Black Truffle goes on straight out of the air fryer, while the potatoes are still hot. Truffle tastes best on a warm, crispy crust, which is why it never goes in before cooking.

Protein calculated from USDA FoodData Central and the MEALUP label (21 g in 1 serving).
