Mish-mash with MEALUP Cheddar
Jump to recipeMish-mash is the Bulgarian scramble of eggs, bell peppers, tomatoes and white cheese, all cooked in one pan. It's ready in 15 minutes and gives you 41 g of protein per plate, with 2 servings of MEALUP Cheddar over the finished dish. This is the breakfast every grandma in Bulgaria makes from memory, with whatever she finds in the fridge.
The beauty of mish-mash is that it forgives everything: fewer peppers, more tomatoes, onion or no onion. The base stays the same: the eggs cook together with the vegetables in one pan, and you eat straight from it.
MEALUP Cheddar goes on last, over the finished mish-mash. That way its cheddar flavor comes through on the warm eggs and doesn't get lost among the seasonings during cooking.

Preparation
- Chop the vegetablesFinely chop the onion, slice the peppers into strips and dice the tomatoes.
- Fry the onion and peppersHeat the oil in a pan over medium-high heat. Add the onion and peppers and fry for 5 minutes, until soft.
- Add the tomatoesAdd the tomatoes and cook for 2 to 3 minutes, until they release their juices and soften.
- Crack in the eggsCrack the eggs straight over the vegetables in the pan, season with salt and stir gently.
- Finish on the stoveCook for 3 to 4 minutes, stirring now and then, until the eggs are set the way you like them.
- Sprinkle and serveTake the pan off the heat, crumble the white cheese over the top and sprinkle with 2 servings (60 g) of MEALUP Cheddar. Stir gently and serve right away.
Tips
- Want a creamier mish-mash? Take the pan off the heat just before the eggs are fully set: they finish cooking in their own heat.
- Add cucumber or bread on the side for a more complete meal.
- Out of tomatoes? Use 1 tbsp of tomato paste thinned with a little water.
MEALUP Cheddar goes on last, over the finished mish-mash, just before you serve it. That way you really taste the cheddar on the warm eggs.
Protein calculated from USDA FoodData Central and the MEALUP label (20 g in 1 serving).
