Roasted zucchini with MEALUP Hard Italian Cheese
Jump to recipeRoasted zucchini with garlic and olive oil is ready in 30 minutes and gives you 13 g of protein per serving, with MEALUP Hard Italian Cheese sprinkled on straight out of the oven. An easy summer side for when zucchini are at their peak.
Roasting sets them apart from boiled zucchini: the edges caramelize a little and the flavor stays more concentrated. It takes minimal prep and almost no attention while they're in the oven.
MEALUP Hard Italian Cheese goes on as soon as the zucchini come out of the oven, while they're still hot. Its flavor clings to the warm slices, as if they had been baked with cheese on top.

Preparation
- Slice the zucchiniWash the zucchini and cut them into slices about 1 cm thick, leaving the skin on.
- Season themPut the slices in a bowl and add the olive oil, grated garlic, oregano, salt and black pepper. Toss gently so they don't break.
- Spread them outLay the slices in a single layer on a baking sheet lined with parchment paper, with as little overlap as possible.
- RoastRoast at 200°C for 18 to 20 minutes, until the edges are lightly browned and the zucchini are tender but still hold their shape.
- Sprinkle and serveTake the zucchini out of the oven and, while they're still hot, sprinkle them with 1.5 servings (45 g) of MEALUP Hard Italian Cheese, ½ serving (15 g) per person. Serve right away.
Tips
- For less water in the pan, salt the slices 10 minutes ahead and pat them dry with a kitchen towel before seasoning.
- No oregano? Add freshly chopped basil after roasting.
- The slices stay firm if they're at least 1 cm thick and aren't piled on top of each other in the pan.
- A good side for roast chicken or pasta.
- Want more protein? Use a full serving (30 g) per person. Each plate then has about 22 g of protein.
MEALUP Hard Italian Cheese goes on right after roasting, while the zucchini are still hot. Its flavor clings to the warm slices and makes them taste as if they were lightly baked with cheese on top.
Protein is calculated from USDA FoodData Central and the MEALUP label (21 g in 1 serving).
